Wash very well the clams and the mussles in cold water. Boil them and, when they open, take them of the shell and put them in a bowl.


Clean carefully the cuttlefish, take off the bone, eyes and the ink bag, cut them in fine strips and boil them in salted water for about 20 minutes.


Make a sauce with wine, onion, 3 branches of parsley, juice of half a lemon, a few peppercorns, celery, a pinch of salt and a liter of water. Boil for 10 minutes.


Boil the shrimps for 8 minutes and peel them. Put them in the bowl with the clams and mussels.


Boil the potatoes in salted water, peel and dice them (after they cool) and add them in the bowl.


Slice the olives, mushrooms, pickles and add them and the capers in the bowl.


Make a mayonnaise with 2 egg yolks, 2 dl oil, juice of a lemon, salt and peper and mix it with all the ingredients in the bowl.
