Crawfish cocktail Duplicate recipe

Directions
1.

Put a pan on the stove with a lot of salted water, add the bay, parsley, onion, carrot, celery, a few peppercorns and boil for about 8 minutes. Well wash the crawfishes, boil them for about 8 minutes, drain, decorticate and let them cool.

2.

Separate the egg yolks in a bowl, add a little salt and then, continually stirring, add the oil little by little and, alternating, a few drops of lemon juice. The mayonnaise is ready when it's not absorbing anymore oil.

3.

Add ketchup, a few drops of worcester sauce and half a glass of cognac. You will obtain a pink sauce.

4.

Wash the lettuce (leaf by leaf), drain and dry it. Take four little bowls and put a lettuce leaf in each bowl, put the crawfish over them (keeping aside 8 crawfish)

5.

Cover everything with mayonnaise and decorate each bowl with the remaining crawfish.
