Melt 30 grams of butter in a saucepan and add a spoon of flour. Stir well so you get rid of the lumps and dilute with 250 ml of warm milk. Add salt, pepper and some nutmeg. Cook for a few minutes until it thickens. Take off the stove and mix it with the chopped gorgonzola.


Dilute the remaining 2 spoons of flour with a glass of milk, add the eggs, salt and mix it well. With this batter, make thin crepes.


Spread the gorgonzola sauce on the crepes, roll and put them in a buttered thermoresistant glass tray, spread over the rest of melted butter and add the parmesan. Keep them in the oven for a few minutes.
