Sprinkle the duck with chopped bacon, sage and rosemary, brush lightly with oil, salt and pepper to taste and cook in preheated oven for about an hour.


Meanwhile prepare the sauce like so: brown the garlic in a few table spoons of oil, take it out, add the chopped anchovy, the shrimps, parsley, salt and pepper to taste, a tablespoon of vinegar and cook it on high heat continuously mixing.


Take the duck out of the oven (before it's cooked) cover it with the sauce and put it back in the oven to finish cooking.
