Scald the spinach in salted water for 5 minutes, drain, squeeze and chop. Heat some oil in a saucepan and add the garlic and spinach, cook for a few minutes, stirring frequently.


Remove garlic, pour the spinach into a bowl, add the egg, parmesan, a pinch of salt and mix well the ingredients with a wooden spoon.


Place the flour on a pastry board, add the butter in the center (you can use lard), softened and cut in flakes and mix by pouring enough water until mixture is smooth and elastic. Roll out the dough with a rolling pin and achieve two puffs, one thin with the diameter of the pan (20-22 cm) and the other slightly larger and thicker.


Place the larger and thicker puff in the pan greased with butter, pour over the mixture of spinach leveling the surface and cover with the smallest puff. Prick the surface with a fork and bake at 190 degrees for about 10 minutes. If desired, the erbazzone can be prepared with one puff of dough, exposing the filling.
