Directions

Peel the artichokes, wash them then leave them in water and lemon juice for 30 minutes.

In the meantime, in a small frying pan, fry the chopped peeled onion and bacon, with 3 tablespoons of oil; add the frozen peas, and then half a glass of warm water. Salt to taste and cook, covered, for 15 minutes.

Out of the fire add a tablespoon of Parmesan cheese, bread crumbs and the chopped parsley with the garlic. Stir and make sure that the mixture is rather dry, otherwise add more Parmesan cheese.

Drain well the artichokes and distributed between the leaves the mix of peas and bacon; arrange the artichokes in a saucepan, standing. Sprinkle with plenty of oil; add a small glass of water (just pouring it only around the artichokes).
Cook, covered for about 40 minutes.
