Directions

Put in a kneading machine 500 grams of Manitoba flour, 2 tablespoons of extra virgin olive oil, 250 ml of hot water (even more if needed) and 10 grams of fine salt.
At speed 1, mix all the ingredients so that the end result is quite elastic and therefore moldable (about 10 minutes, but if you do it by hand, there will need at least 20 minutes mixing vigorously without stopping).
Put in fridge about 1 hour before use, then roll it out very thin (must be transparent).
