Cut to lengthwise the pineapple, so as to open them in half and leave to each half the tuft attacked. Eliminate the hard central core, then remove the pulp and blend in the blender. Then put it in a bowl and add the juice of orange and lemon (to prevent that the mixture oxides and becoming dark).


Put in a saucepan 350g of sugar, add a glass of water and bring it on the fire. Cook until the sugar has completely dissolved and bubbles will form on the surface. Let it cool, then mix with the chopped pineapple (in the meantime cover the fruit with plastic wrap).


Put the mixture of pineapple and sugar in an ice cream freezer and prepare the sorbet.
Just before serving, divide it into the small bowls, brought to the table and sprinkle on the sorbet some champagne or sparkling wine.
