Wash the grapefruits, cut them in half, remove seeds and then empty them without breaking the core. Keep at least 1 / 4 of pulp for decoration.


Mix the grapefruit pulp with the chopped tomatoes and olives, add the lemon juice, oil and salt and mix them in the blender untill you obtain a creamy composition wich you keep in the fridge for 10 minutes.


Wash the green lettuce and put a lettuce leaf in an icecream cup. Pour on top the composition you made earlier, decorate with the grapefruit pulp, slices of egg ( about 3 slices per cup ) and the remaining olives.
