Directions
1.

The dutch sauce is prepared with 3 egg yolks, two tablespoons of cold water, 200 grams of diced butter, 3 teaspoons of lemon juice, half a teaspoon of salt and a little freshly grinded white pepper.

2.

Keep the sour cream in the fridge until using it. Whisk the sour cream until it becomes a mousse and put it back in the fridge.

3.

Prepare the dutch sauce with the ingredients enumerated above, being carefull about the butter quantity so that it results a dense sauce. As soon as it's done, cease the heat and slowly incorporate the sour cream mousse, spoon by spoon, with a circular motion.
