Prepare the dough by mixing the flour with the eggs and a pinch of salt, and then allow resting for a while.
In the meantime, prepare the filling by mixing the Ricotta cheese with the chopped basil, nutmeg, salt and a handful of Parmesan cheese.


Roll out the dough, place the filling into spaced small mounds, cut and give the form of ravioli. Boil them in abundant salted water and then cook them in a pan with a little butter, the advanced filling and the cooking water. Mix with more Parmesan cheese and a pinch of pepper.
