Slice the zucchini into thin strips. The exceeding part of the zucchini cut it into small cubes. Blanch the slices of zucchini in boiling salted water for 30 seconds. Then put them to dry and prepare the filling.
Chop the onion and brown it in a tablespoon of olive oil for five minutes on low heat.
Then add the zucchini, cut into cubes, salt and cook for 10 minutes.


Add the coarsely chopped pine nuts and cook for another two minutes.


Mix the breadcrumbs with the thyme and a little salt. Then add the zucchini mixture and the egg.
Cover a slice of zucchini with the stuffing and wrap the zucchini on itself.


Pass the roll in bread crumbs (in this do not add thyme) and then fix it with a toothpick.


Arrange the rolls in an oiled baking dish or covered with baking paper.


Bake in oven at 200° for 20 minutes.
