Directions
1.

Sieve the flour on the working surface, make a hole in the middle where you add the sugar, chopped butter, egg yolks, lemon zest and a pinch of salt.

2.

Knead the dough fast (to not melt the butter) until it's homogenous. Wrap it in baking paper and keep it in the fridge (in the less cold section).
