Clean the mussels by washing them well under running water. Scraping the outer surface of the shell to remove any incrustations and detach the byssus by tugging with the blade of a knife.


Put the oil in a large saucepan, add the peeled garlic, the mussels and place it on the fire. Cook covered on high flame and wait until the mussels open up. It usually takes 5-7 minutes. Stir from time to time shaking the saucepan.


Meanwhile, wash the parsley, pick the leaves and chop finely on a cutting board. Once cooked add the chopped parsley, a generous grinding of pepper, mix well and serve.

The "Peppered mussels" is a very simple recipe, but very tasty, thanks to the flavor of the mussels that is put into particular attention from garlic and pepper, the protagonist of this preparation. Is possible to sprinkle (after you have added the mussels) with the excellent dry white wine and let it evaporate. For the red version, just add (while the mussels are opened) the cherry tomatoes crushed by hands.
