Polish Asparagus Duplicate recipe

Directions
1.

Cut the asparagus about the same length and tie them in bouquts.

2.

Put them in a tall pan to boil ( only when the salted water is boiling ) leaving the tops out ( so they can cook in steam) and leave them for 30 minutes.

3.

Chop fine the potatoes and eggs, obtaining a omogen composition, add the chopped parsley and fry them in a pan with the remaining butter, on medium heat.

4.

Grease a tray with butter, add the asparagus and on top the potato composition.

5.

Cook in the oven for about 10 minutes at 200° C.

Serve hot with tomato slices.
