First, prepare the filling: crumble the bread crumbs, put it in a saucepan covered with milk, put it on the heat and leave it, stirring with a wooden spoon, until all the milk has been absorbed.


Remove the breadcrumbs from the heat and put into a bowl. Add the chicken b****t and chopped ham, Parmesan cheese, chopped parsley, the butter cut into small pieces, a pinch of nutmeg, salt and pepper. Complete with a whole egg and egg yolk and mix the ingredients well.


Cut in half the meat with a sharp knife, leaving it attached on one side, flatten it slightly, then remove the two parts still stuck in the middle, leaving them attached always on the same side.
You will get four slices of meat attached to one side.


Flatten well each slice with a meat pounder, distribute the stuffing between the meat slices, reassemble the knob of beef inside by closing the stuffing, sew the openings and tie the meat as a roast.


Put on the heat an oval casserole with the onion, carrot and celery, butter and cloves then add the meat and brown it on all sides, turning it over.


Then put the casserole in the oven and leave for about two hours. When the meat is well colored, pour a bit of Madeira or Marsala and continue cooking adding, from time to time, a bit of broth.


Drain the meat, let it cool slightly, untie, cut into slices and arrange on a heated plate.


Pass the sauce through a sieve, add the flour mixed with the remaining butter, place it on the fire and boil for a few minutes.
Pour the sauce over the meat (or pass it separately in a sauce boat) and serve.
