Melt 50 grams of butter in a saucepan, incorporate the flour, mix well to eliminate the lumps, dilute it with a little warm milk and cook, adding, little by little, all the milk. Cook the resulted sauce for a few minutes, add salt and pepper to taste.


Butter a ovenproof glass recipient and create layers alternating the polenta, sauce, truffle slices and grated cheese.


Cover the last layer only with grated cheese and chopped butter. Gratinate in in well heated oven for about 20 minutes and take it out of the oven when the surface it's well browned. Serve it with cheese.

You can replace the truffles with fresh mushrooms.
