Directions

Clean the spinach, wash them repeatedly, boil them in a little salted water, drain them, squeeze them well and chop fine.

Boil, separately, carrots and cauliflower, drain them, cut the carrots into slices and divide the cauliflower into small pieces. Cook each vegetable in a little butter, and then pass them (separately) through a sieve.

Melt the remaining butter (less than a walnut) in a saucepan, stir in the flour, stirring with a wooden spoon to prevent the lumps forming, and dilute with boiling milk, poured a little at a time and stirring constantly.

Cook the béchamel sauce for a few minutes, season with salt, pepper and nutmeg to taste, remove from heat and divide it into three parts. Add the carrots to one part, the spinach to the second part and the cauliflower to the last part; add three eggs to the mixture of carrots and two eggs each to the other.

5.

Grease a mold; pour first the mixture of carrots, then the mixture of spinach and finally the mixture of cauliflower. Bake in a moderate oven, in the bain-marie for about 1 hour.
Allow the flan to rest for a few minutes in the mold before turn out.
